Chocolate Haupia pie


A classic Hawaii favorite made with a buttery macadamia nut shortbread crust, a layer of haupia (Hawaiian coconut pudding) and topped with a layer of chocolate haupia pudding. Recipe from Sugar Geek Show

Flakey Pie Dough

  • ▢10 ounces (340 g) all-purpose flour

  • ▢1/4 teaspoon salt

  • ▢8 ounces (170 g) cold butter grated

  • ▢2 ounces (28 g) ice water

  • You can use a store bought already prepared pie crust

Haupia Pie Filling

  • ▢14 ounces (397 g) coconut milk one can

  • ▢8 ounces (227 g) water or milk

  • ▢2 teaspoons coconut extract

  • ▢7 ounces (199 g) granulated sugar

  • ▢8 ounces (227 g) water

  • ▢2 ounces (56 g) cornstarch

  • ▢6 ounces (170 g) chocolate good quality

  • ▢1 teaspoon vanilla extract

Whipped cream topping (optional)

  • ▢12 ounces (340 g) heavy cream

  • ▢2 ounces (57 g) powdered sugar

  • ▢1 teaspoon vanilla extract

  • ▢2 teaspoons powdered gelatin

  • ▢3 Tablespoons cold water

  • ▢1 teaspoon heavy cream
